BLACK BEAN AND TOMATO GAZPACHO

INGREDIENTS

1 cup cooked black beans, rinsed,
drained or home madeBlack bean gazpacho
1 medium ripe tomato
1 cup fresh parsley
1 teaspoon olive oil
½ cup of water
½ avocado, chopped
⅓ cup chopped cilantro
salt, cayenne

PREPARATION

In a blender or Nutri-Bullet combine olive oil, water, beans, tomato and parsley. Blenderize. Pour into serving dish and season to taste. If soup turns out too chick, add some water. Garnish soup with chopped avocado and cilantro. Makes 2-3 servings.

COMMENT

This soup can be eaten hot or cold. Either way, it’s packed with nutrients, fiber and protein. It takes five minutes to prepare, and it’s delicious!
